| chicken or pork

Schnitzel is a versatile option for either a quick and easy meal or an elegant dish.

Heat oil in a large skillet over medium-high heat. Fry Schnitzel (either pork or chicken) in the skillet, uncovered, cooking until the meat is no longer pink in the center, and breading is a golden brown, approx 3-5 minutes on each side, depending on thickness. Chicken Schnitzel may take a bit longer to cook.

For a quick meal, serve on bun with garnishes of choice. (pictured above with mayonnaise, lettuce and mushrooms).

For a more elegant option, serve with a side of vegetables and either potatoes or spaetzle. Great with or without a sauce.

3/4 cup chicken stock
2 tbsp of chopped fresh herbs (dill or parsley)
1/4 cup cream
1/4 cup sour cream
Salt & Pepper to taste
lemon juice to taste

After frying schnitzel, place them on a plate and keep warm. Using the same skillet, add broth to deglaze the pan, scraping the bottom to loosen the brown bits. Add fresh herbs, cream and sour cream. Stir until thickened, but do not boil. Season with salt, pepper, and lemon juice to taste.
