smoked turkey pea soup

SMOKED TURKEY PEA SOUP

Great fall soup using Windmill Meats smoked Turkey legs and wings. (can substitute turkey for ham hock if preferred).

 

 

 

INGRIDIENTS:

2 cups yellow split peas
2-4 smoked turkey wings/legs
10 cups water or broth 
1 onion diced
2-3 celery diced
2-3 carrots diced
1 bay leaf
salt and pepper to taste


DIRECTIONS:

Rinse peas prior to cooking. In large pot, place peas, smoked turkey and water. Bring to boil. Reduce heat to low, cover and simmer for 1 hour. Add vegetables and seasoning. Simmer for
1 hour more. Remove Smoked Turkey legs/wings from pot and remove meat. chop meat and return to soup. Taste and add seasonings/adjust according to taste. Simmer until peas are very soft.
